Chili oil:
- A twelve-cup neutral oil (I like sunflower)
- Cayenne pepper, 2 tbsp
- One teaspoon sugar
- One tsp. paprika
- Seasoning salt and pepper
Steps
- Cut the chicken into one-inch chunks. Remove any large pieces of fat—season with salt and pepper to taste.
- Mix milk, eggs, and spicy sauce in a medium mixing dish. Separately, combine the flour, salt, chili powder, and garlic powder.
- Coat the chicken with the milk mixture. Then, transfer to the flour mixture and coat thoroughly. It is recommended to coat all of the chicken pieces before cooking them.
- Preheat the frying oil to 350° F. Fry the chicken bites for about 6-7 minutes, or until the chicken is cooked and the crust is crispy. When the chicken is perfectly fried, remove it and drain the bites on a wire rack. Meanwhile, combine the chili oil components in a small saucepan over low heat. Keep heated, but not too hot, or the spices will burn.
