Many factors allow differentiating this type of machinery, but, above all, we can do it according to its heat source, in which we can distinguish between two kinds of kitchen plates:
Gas griddles
This first type of kitchen plates has higher power and reach a higher temperature with less consumption. The problem is that these must be installed by a licensed professional and not portable. Gas cooking plates are used in the same way as any pan over the fire. In this case, the advantage is that the flame is not exposed, while being an electric plate, turn the knob to start cooking. Cook in just a few minutes.
Electric irons
These irons use electrical power, a single-phase, and portable, which turns out to be very useful. Perfect for spaces that do not have gas circuits, or where an installation cannot be carried out. These plates have a thermostat, which is used to set the temperature and legs that, in general, have a non-slip base to separate the heat from the table or counter where you put it.
Made of rolled or corrected steel
This material is one of the most used due to its price, quality, and resistance. It is possible to cook at different temperatures in widely spaced zones, which is very useful for cooking different foods at the same time and is recommended for small restaurants or bars. One of its drawbacks is that it oxidizes, so after using it, you have to apply ice (while it is hot) to remove the grease, clean it thoroughly with degreaser, and dry it properly to avoid leaving a trace of moisture on the plate.
Chromed hard steel or hard chrome
This type of grill has a plate with high thermal inertia and a polished thickness and coated with hard chrome, which lengthens its durability to its non-stickiness. Its thermal inertia is extraordinary, but it takes longer to heat up and does not allow hot areas. If the hob is cleaned correctly with ice or cold water, it can be in perfect condition even ten years after it leaves it.
Enamelled rolled steel
The types of kitchen plates with this material have a porcelain enamel that serves to prevent the plate from rusting. This makes it possible to work at different temperatures; however, no nappy changes should be made. On the other hand, it is also not advisable to clean with ice or cold water as it could damage the plate and lift the enamel.
Stainless steel
Those of this material has less thermal inertia and, therefore, are terrible both in juiciness and time and money. The only positive point is that it does not rust, but, in this case, you can buy a hard chrome plated. You can get these accessories from Schaumburg specialties at good prices.
