Idli is one of such food from Indian cuisine which is worth trying.Although you can easily eat it in an Indian Restaurant here is our Idli recipe which we adapted from Food Corner recipe blog.

Ingredients for making idli
- 240ml water
- 1tsp crystal salt
- 2tsp sesame oil
- 1/4tsp baking soda
- 2cups lentils
- 2cups soaked rice
- Half tsp. fenugreek seeds
Steps to be followed to make authentic soft idli
Soaking
Soaking time and quality of ingredients both are very important for delicious idles. Wash and soak rice and lentils for 5-6 hours.
Grinding
- The secret of soft and fluffy idli lies in grinding and the consistency of the batter if your batter is thick then your idli will be rock hard
- First of all grind the lentils. Add water little by little to the batter grind lentils for about 30-40 minutes the batter of lentils should not be sticky but light and soft.
- Add the soaked rice along with little water then add the lentils and ground rice for another 5 minutes so it gets mixed well.
- Then remove the batter from the grinder, add salt and remaining ingredients in it and mix it well with your hands
Fermenting
- Give at least 6-7 hours for the batter to ferment. This situation may depend on the weather condition. In the winter season, it may need a longer time and in the summer season, it may require less time.
- The batter would have risen nicely if it has fermented well.
- Mix the fermented well .now it is ready for making idle. If you are not going to use immediately, refrigerate the batter.
Steaming
- Grease the idli molds
- If using pressure cooker remove the whistle
- The Steaming process is very important, use idli steamer or cooker for making soft and delicious idli.
- Steam for 10-15 minutes; insert a fork in the middle to check the status. Once Idlis are well steamed invert the mold on a plate. Then remove the mold gently.
Let’s serve and enjoy the yummy idles with red chili coconut chutney or sambar.
